Why Water Matters in Coffee

Water is both an ingredient and an extraction tool. Its taste and mineral balance shape what reaches the cup.

The short answer

Use clean, fresh water that tastes pleasant by itself and contains some minerals. If tap water smells of chlorine, tastes metallic or creates heavy limescale, filtration can improve both the coffee and the life of your equipment.

Water is not a neutral background

Brewed filter coffee is overwhelmingly water, but water does more than dilute coffee. Its minerals interact with flavour compounds during extraction, while its alkalinity affects how acidity is perceived in the finished drink.

Two people can use the same coffee, grinder and recipe in different towns and get noticeably different cups because their water is different.

The problems you can actually taste

Chlorine and unwanted odours

If water smells like a swimming pool, the coffee may carry a dull chemical or medicinal note. A basic carbon filter jug often reduces chlorine and improves the result.

Very hard water

Hard water contains higher levels of calcium and magnesium compounds. Some mineral content supports extraction, but very hard water can make bright coffee taste muted and causes scale inside kettles and espresso machines.

Scale is not only cosmetic. It can restrict water flow, reduce heating efficiency and damage equipment.

Very soft or demineralised water

Water with almost no mineral content can produce coffee that tastes thin, sharp or strangely empty. Distilled or reverse-osmosis water should normally be remineralised before brewing.

High alkalinity

Alkalinity describes the water’s ability to buffer acids. Water with high alkalinity can soften lively acidity so much that a bright coffee tastes flat. Very low alkalinity can make acidity feel aggressive.

You do not need to become a water chemist to make breakfast. The goal is balanced, pleasant water—not a spreadsheet with a flavour wheel attached.

A practical home approach

  1. Taste your tap water at room temperature.
  2. Smell it for chlorine or metallic notes.
  3. Check how quickly scale appears in the kettle.
  4. Brew the same recipe with tap water and filtered water.
  5. Compare the cups after they have cooled slightly.

If filtered water produces a cleaner, sweeter cup, you have found a useful improvement without changing the coffee recipe.

Bottled water is not automatically better

Some bottled waters are excellent for coffee. Others are extremely hard or almost mineral-free. “Mineral water” describes a category, not a guarantee of balanced brewing.

Avoid heavily mineralised sparkling water and do not use distilled water on its own. If you buy water specifically for coffee, choose still water with a moderate mineral content and a neutral taste.

Water and espresso machines

Before changing espresso-machine water, check the manufacturer’s recommendations. Water that tastes good but creates scale may shorten the life of the machine. Water with too little mineral content can also create technical problems in some machines.

Filtration should balance flavour, scale protection and corrosion protection. If your kettle develops a visible crust quickly, the espresso machine is seeing the same water—just in a place that is harder to clean.

What a TDS meter cannot tell you

A TDS meter estimates the total amount of dissolved material in water. It does not identify which minerals are present or reveal the alkalinity by itself.

It can help compare water sources, but a single TDS number cannot tell you whether water will taste good with coffee.

Try this today

Make two small brews using the same recipe:

  • one with your normal tap water;
  • one with freshly filtered water.

Taste them warm and again as they cool. Look for differences in aroma, clarity, sweetness and aftertaste.
